Did you know there is such a thing as National Banana Bread Day? I just Googled this and it turns out it’s somewhere in the middle or end of February each year. The more you know! Still, I think banana bread is versatile enough to be eaten year-round instead of only on a specific day in February.

As you probably expect, banana bread is pretty high in calories so if you’re on a weight loss journey, just keep that in mind. If you’re not you’re good to go! This recipe will probably give you 4 servings with each serving being 480 calories. It’s probably closer to 8 servings if you’re looking to serve it as a snack with some coffee. Enjoy!

Ingredients
  

  • 3 ripe bananas mashed
  • 1/4 cup coconut oil melted
  • 1/4 cup maple syrup or agave
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup protein powder vanilla or plain
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, combine mashed bananas, melted coconut oil, honey (or maple syrup), and vanilla extract.
  • Add all-purpose flour, protein powder, baking soda, and salt. Mix until just combined.
  • Fold in chopped walnuts.
  • Pour the batter into the prepared loaf pan.
  • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Allow banana bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
