Ingredients
  

  • 4 slices of bread cubed
  • 1 cup firm tofu crumbled
  • 1 cup mixed vegetables e.g., bell peppers, spinach, mushrooms
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup plant-based milk e.g., almond milk
  • Cooking spray or oil for greasing

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a bowl, combine the crumbled tofu with nutritional yeast, garlic powder, salt, and pepper.
  • In a greased baking dish, layer half of the bread cubes followed by half of the tofu mixture and half of the mixed vegetables. Repeat with another layer of bread, tofu, and vegetables.
  • Pour the plant-based milk evenly over the layers.
  • Cover the baking dish with foil and bake for 25-30 minutes. Then uncover and bake for an additional 10 minutes until golden brown and set.
  • Let it cool slightly before serving.
