BBQ Jackfruit Sliders

Guilty pleasure? Maybe. But if you eat them in moderation they can be nutritious, delicious, and pretty low in calories. That’s because the bulk of this recipe consists of jackfruit which is a great source of potassium, vitamin C, and different forms of vitamin B.

A serving in this recipe consists of 2 buns (490 kcal) so if you’re trying to eat a little less, just opt for one bun which would be quite a friendly 245 kcal. On top of that, let’s not forget that jackfruit with some BBQ sauce is delicious and probably one of my favorite lunch options.

BBQ Jackfruit Sliders

Ingredients
  

  • 1 can 20 oz young green jackfruit in brine, drained and rinsed
  • 1/2 cup vegan BBQ sauce
  • 4 small slider buns or dinner rolls
  • 1/2 cup coleslaw use a vegan-friendly recipe
  • 1 tablespoon vegetable oil

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a pan, heat the vegetable oil over medium heat. Add the jackfruit and cook for a few minutes until it starts to brown.
  • Use a fork or potato masher to break apart the jackfruit until it resembles pulled pork.
  • Add the BBQ sauce to the pan and stir to coat the jackfruit evenly.
  • Reduce the heat and simmer for about 10-15 minutes, until the sauce has thickened and the jackfruit is tender.
  • Toast the slider buns in the oven for a few minutes until lightly crispy.
  • Assemble the sliders by placing a generous amount of BBQ jackfruit on the bottom bun, topping it with coleslaw, and then the top bun.
  • Serve warm.
