Vegan Waffles With Nut Butter

Waffles. I would eat them more if I had access to a waffle iron but I haven’t bought a waffle iron yet because I would eat more waffles, the irony. Nevertheless, they’re a crowd favorite and are probably up there with pancakes when it comes to delicious and sweet breakfast options.

These waffles are made with almond milk and, if you have a protein powder you like, I suggest adding a scoop or so to make them high-protein. Top the whole thing off with some healthy nut butter and you’re good to go!

Ingredients
  

  • 1 cup all-purpose flour
  • 1 scoop vegan protein powder
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1 cup almond milk or other plant-based milk
  • 2 tablespoons vegetable oil
  • Nut butter e.g., almond butter
  • Sliced bananas

Instructions
 

  • In a mixing bowl, whisk together flour, protein powder, baking powder, and sugar.
  • Add almond milk and vegetable oil to the dry ingredients. Mix until smooth.
  • Preheat a waffle iron and lightly grease it with oil.
  • Pour batter onto the waffle iron and cook according to the manufacturer’s instructions.
  • Serve the waffles topped with nut butter and sliced bananas.
