Vegan High-Protein Pasta Alfredo

Simple, yet tasty. That’s how I would describe this vegan pasta alfredo. The great thing about this dish is that it also contains quite a bunch of protein thanks to the tofu and the white beans. I love mixing in tofu in a number of my dishes because it’s quite tasteless, has a soft texture, and therefore blends in well with the other ingredients. Would definitely recommend giving this a try!

Vegan High-Protein Pasta Alfredo

Ingredients
  

  • 8 oz pasta whatever pasta has your preference
  • 1 cup pasta cooking water
  • 1/4 block firm tofu
  • 8 oz white beans rinsed and drained
  • 1 cup cauliflower
  • 1/6 cup nutritional yeast
  • 1 tsp garlic fresh, powder or minced
  • 1 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Cook pasta according to the instructions.
  • Steam/boil cauliflower until soft.
  • Add cauliflower into blender with beans, tofu, pasta cooking water, nutritional yeast, salt, pepper, and garlic. Blend until smooth (add more water if you need it).
  • pour into pasta, stir and serve.
