Everybody’s favorite breakfast recipe? Maybe. One thing I do know is that many of us enjoy a good, tasty breakfast, and that’s why pancakes are on the menu at every breakfast place in the world. However, we’re here to get stronger and eat healthier. That’s why we’re adding a bunch of protein to this recipe so we can start the day on the right foot.

Vegan Banana Protein Pancakes

Ingredients
  

  • 1 cup whole-grain flour such as whole wheat or oat flour
  • 2 scoops vegan protein powder flavor of your choice
  • 2 ripe bananas mashed
  • 1 cup almond milk or any other plant-based milk
  • 2 tbsp maple syrup optional
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • salt to taste
  • oil for the pan

Instructions
 

  • In a large mixing bowl, whisk together the whole-grain flour, vegan protein powder, baking powder, and a pinch of salt until well combined.
  • In a separate bowl, mash the ripe banana until smooth. Add almond milk, maple syrup (if using), and vanilla extract to the mashed banana, and whisk until everything is well combined.
  • Pour the wet ingredients into the dry ingredients, and stir until just combined. Be careful not to overmix; a few lumps are okay.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or oil.
  • Once the skillet is hot, pour about 1/4 cup of batter onto the skillet for each pancake. Use the back of a spoon to spread the batter into a round shape, if needed.
  • Cook the pancakes for 2-3 minutes on one side, or until bubbles start to form on the surface. Flip the pancakes and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through.
  • Transfer the cooked pancakes to a plate and repeat the process with the remaining batter, greasing the skillet as needed between batches.
  • Serve the pancakes warm with your favorite toppings, such as fresh fruit, nuts, seeds, a drizzle of maple syrup, or vegan whipped cream.
