Everybody’s favorite breakfast recipe? Maybe. One thing I do know is that many of us enjoy a good, tasty breakfast, and that’s why pancakes are on the menu at every breakfast place in the world. However, we’re here to get stronger and eat healthier. That’s why we’re adding a bunch of protein to this recipe so we can start the day on the right foot.

1cupalmond milkor any other plant-based milk

Instructions
In a large mixing bowl, whisk together the whole-grain flour, vegan protein powder, baking powder, and a pinch of salt until well combined.
In a separate bowl, mash the ripe banana until smooth. Add almond milk, maple syrup (if using), and vanilla extract to the mashed banana, and whisk until everything is well combined.
Pour the wet ingredients into the dry ingredients, and stir until just combined. Be careful not to overmix; a few lumps are okay.
Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or oil.
Once the skillet is hot, pour about 1/4 cup of batter onto the skillet for each pancake. Use the back of a spoon to spread the batter into a round shape, if needed.
Cook the pancakes for 2-3 minutes on one side, or until bubbles start to form on the surface. Flip the pancakes and cook for an additional 1-2 minutes on the other side, or until golden brown and cooked through.
Transfer the cooked pancakes to a plate and repeat the process with the remaining batter, greasing the skillet as needed between batches.
Serve the pancakes warm with your favorite toppings, such as fresh fruit, nuts, seeds, a drizzle of maple syrup, or vegan whipped cream.
