No matter how you look at them, omelets are a pretty versatile dish and that’s probably why they’re loved and eaten by so many people. Since the regular, animal-based omelet is out of the question for us, I figured I would come up with a vegan-friendly version of this famous dish.

Now, the recipe below is pretty self-explanatory and if you’re looking for a hearty start of your day, this should probably be on your shortlist. I can also advise you to add the nutritional yeast and probably even substitute the regular salt for black salt to give the omelet that egg-y flavor. Enjoy!

Ingredients
  

  • 1 cup chickpea flour
  • 1 cup water
  • 1 tablespoon olive oil
  • 1 cup fresh spinach chopped
  • 1 cup mushrooms sliced
  • Salt and pepper to taste
  • Optional: nutritional yeast for a cheesy flavor

Instructions
 

  • In a mixing bowl, whisk together the chickpea flour and water until smooth. Season with a pinch of salt and pepper. Set aside.
  • Heat olive oil in a non-stick skillet over medium heat. Add the chopped spinach and sliced mushrooms to the skillet. Sauté until the spinach wilts and mushrooms are tender, about 3-4 minutes. Season with salt and pepper to taste.
  • Pour the chickpea flour batter over the sautéed spinach and mushrooms in the skillet. Use a spatula to spread the mixture evenly.
  • Allow the omelet to cook undisturbed for 4-5 minutes on medium-low heat, or until the edges start to set and the bottom is golden brown.
  • Carefully flip the omelet using a spatula to cook the other side. Cook for an additional 3-4 minutes until both sides are golden and the omelet is cooked through.
  • Slide the omelet onto a plate and cut into wedges. Sprinkle with nutritional yeast if desired for a cheesy flavor.
  • Serve hot as a healthy and delicious vegan breakfast or brunch option.
