Coconut Yogurt Parfait

I know many of you love a good plant-based yogurt recipe. However, just plain old yogurt isn’t going to cut it for us today. For that reason, I decided to come up with this recipe which is a simple, yet fancy, coconut yogurt parfait.

The reason this is better than regular yogurt is that we’re adding a bunch of freshly chopped fruits and mixed nuts to it for both sweetness and filling. Granted, I don’t put on the mixed nuts myself (I’m allergic) but my partner does, and she swears by it. Top it off with some agave or maple syrup, and you’re ready to go. Definitely try this one out!

Coconut Yogurt Parfait

Ingredients
  

  • 1 cup coconut yogurt (unsweetened)
  • 1/2 cup granola
  • 1/4 cup mixed nuts (such as almonds, walnuts, or pecans) chopped
  • 1/2 cup mixed fresh fruits (e.g., berries, mango, banana) chopped
  • maple syrup or agave optional

Instructions
 

  • Divide the coconut yogurt evenly between two serving glasses or bowls.
  • Sprinkle half of the granola over the coconut yogurt in each glass.
  • Top each layer of granola with half of the chopped mixed nuts and then half of the mixed fresh fruits.
  • Repeat the layering process by adding another layer of coconut yogurt, followed by the remaining granola, nuts, and fruits.
  • If desired, drizzle a little maple syrup or agave syrup over the top of each parfait.
